Sweet Potatoe Casserole

Yep! Today is the day. Today is the day when I share one of my few recipes. Just like on those real blogs where they really do know how to cook! Thanks to Leah for suggesting I do the Sweet Potatoes. I hope you're ready for this......


Before you do anything get out the Clorox wipes and clean the counter really well. I use a lot of clorox wipes. I don't know if that means I'm really clean or that I'm really dirty!



Now onto the good stuff....


Sweet Potatoe Casserole




3 cups mashed sweet potatoes
1 cup sugar
1/3 cup milk
2 teaspoons vanilla
1/2 cup butter

Add other ingredients to mashed potatoes (note: I did use canned yams, 3 of them, refer to my Feb. 25th entry, sweet taters) and mix well.

The first thing I add is the stick of butter so it can be melting in the hot potatoes. Add everything else and beat with the mixer.




Put into a greased casserole dish.



Topping

1 cup light brown sugar
1/2 cup flour
1 cup chopped nuts
1/2 cup butter



Mix topping and crumble on top of casserole.


Bake in a 350 degree oven for 25 to 30 minutes.

With our Sweet Potatoes we had Turkey and Dressing. It was a good lunch. It was a good supper Monday and Tuesday, too! Part of it was packed up and sent to Columbia with Ned and Kelly! I am going to share my cornbread and dressing photos one day too! I absolutely love cornbread and I could eat it every day! I wish y'all could have smelled my kitchen when all this good stuff was cooking! It was amazing! Here are a couple of fun shots!


Ned was the last one done! But notice we all made the "clean plate club"!




We wiped out this first pan of dressing, luckily I made plenty and had another pan in the fridge ready to bake Monday.

When all the cooking was done and we had eaten and the table cleared and the dishwasher was loaded I turned Ricardo loose and let him do his thing on the kitchen floor. I love Ricardo!!
